Wacky Cake ~ wheat-, egg-, sugar- and dairy-free |
- 1-1/2 cups Spelt Flour
- 1/4 tsp. Guar Gum
- 3 Tbsp. Cocoa
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
- 1/2 tsp. Salt

- 1 cup Pure Maple Syrup
- 1 Tbsp. White Vinegar
- 1 tsp. Vanilla
- 5 Tbsp. Oil
- Dairy-free Chocolate Chips (Topping)
- Sugar-free Raspberry Jam (Topping)

METHOD: |

Preheat oven to 350°F. and prepare (grease) an 8-inch-square cake pan.

Sift all dry ingredients (spelt flour, guar gum, cocoa, baking soda and baking powder) into a large mixing bowl. Note: Ensure that guar gum is well distributed as it could turn into "clumpy gum" when mixed with liquid.
Mix maple syrup, vinegar, vanilla and oil together in a small bowl.
Combine dry and wet ingredients and mix quickly and well.
Pour batter into greased cake pan.
Bake for 25 minutes or until done.
Cool cake on a rack.
Topping
Spread jam over cake.
Melt chocolate chips and spread over jam.
