Wacky Cake |

 


Wacky Cake ~ wheat-, egg-, sugar- and dairy-free

  • 1-1/2 cups Spelt Flour
  • 1/4 tsp. Guar Gum
  • 3 Tbsp. Cocoa
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1 cup Pure Maple Syrup
  • 1 Tbsp. White Vinegar
  • 1 tsp. Vanilla
  • 5 Tbsp. Oil
  • Dairy-free Chocolate Chips (Topping)
  • Sugar-free Raspberry Jam (Topping)

METHOD:

  1. Preheat oven to 350°F. and prepare (grease) an 8-inch-square cake pan.

  2. Sift all dry ingredients (spelt flour, guar gum, cocoa, baking soda and baking powder) into a large mixing bowl. Note: Ensure that guar gum is well distributed as it could turn into "clumpy gum" when mixed with liquid.

  3. Mix maple syrup, vinegar, vanilla and oil together in a small bowl.

  4. Combine dry and wet ingredients and mix quickly and well.

  5. Pour batter into greased cake pan.

  6. Bake for 25 minutes or until done.

  7. Cool cake on a rack.

  8. Topping

  9. Spread jam over cake.

  10. Melt chocolate chips and spread over jam.

  11. Note: Also makes 12 great cupcakes!
